I found this recipe in my mailbox from Operation Blessing. Pray for the Haitians as you enjoy this delicious meal!

The Recipe:
Ingredients for Marinade (makes 8 servings):
1/2 tsp salt
4 garlic cloves, pressed
1/2 jalapeno pepper, finely chopped
1 chicken bouillon cube, crushed
1/3 cup hot sauce
1 lime, juiced
1 lemon, juiced
Directions: Combine above ingredients until mixed well. Pour marinade over 6-8 tilapia filets and coat evenly. Let sit for 30 minutes, then cook on the grill. Or, pan fry the fish in oil and cook until just crispy.

Haiti. One of the poorest countries in the world. Rattled to its core months ago because of the earthquake. And now... Homeless families. Orphaned children.
Our hearts go out to these suffering individuals and we must continue to challenge ourselves to be generous, despite the days and weeks and months that pass by. The people of Haiti still need our help!

1) Donate money to go toward a tent for a homeless family. I recently read a heartbreaking story about families who live in makeshift homes and the struggles they are now facing due to the rainy season. One organization, Compassion, is providing new waterproof camping tents to these families as one small way to help. Check out their website for donation information.

2) Host a jewelry party. I found a neat organization called the Apparent Project. One of the projects they have created is the ability for you to volunteer to host a jewelry party. They will send you the jewelry and then party away with your friends and family! Each piece is labeled with the name of the artisan who made it, which is a really neat and personal way to connect with the people of Haiti. Check out my details here.
